Roast LambRoast leg of lamb deserves a ripe, premium minty Cabernet Sauvignon or Cabernet-Merlot blend. Just avoid the vinegary mint sauce! Lamb roasted with fresh thyme and garlic is delicious with full-bodied, fine quality Shiraz or Cabernet Shiraz blends. With cold lamb, serve a refined, lightly oaked Chardonnay or a soft Cabernet Merlot low in tannins.
Lamb ChopsA vibrant, youthful Cabernet Shiraz will partner lamb chops grilled with a herb and mustard crust. With a garlic and rosemary crust, try a more mature minty Cabernet Sauvignon or Shiraz, or Shiraz Cabernet blends with some bottle-age.
CasserolesA lamb casserole cooked with beans, root vegetables and herb dumplings is quite gently flavoured, almost sweet. Serve savoury Cabernet and Merlot blends, Shiraz Grenache Mourvedre and Shiraz (ideally in blends), as well as soft, fruity Chardonnay Semillon blends. Lamb slowly cooked in red wine and stock deserves a fuller-bodied Cabernet Sauvignon or Cabernet Merlot.
